Dorothy's Curry Shrimp Salad



Dorothy's Curry Shrimp Salad

It just seemed like a shrimp salad kind of day.
My mother-in-law, Dorothy, had the best recipe.


 
Mix and chill:
 

3 boiled eggs, peeled and chopped
1 c. mayonnaise or less
1/2 tsp. curry powder
2 tsp. low-sodium soy sauce

... Cover and refrigerate for about 30 minutes or so

In the meantime, prepare:
2 lbs. cooked, peeled large shrimp
...Chop the shrimp into chunky pieces... not small. Place in a medium bowl and sprinkle with some fresh lime or lemon juice

Add a tiny bit of sea salt
A few "grinds" of black pepper
Mince 2 tbsp. of green onion
1/2 c. or more chopped celery

Mix together: shrimp, seasoned mayonnaise and boiled eggs. Cover and chill. Serve on top of a bed of lettuce.

I want to thank everyone who read my post about my nephew's wife, April, and offered prayers for the husband and three children she left behind. She passed away May 15th at the age of 39 years. We'll miss April always, but God always has a plan for each of us.

Just dropped in from Mona's Whisper, and this is just what our patio supper today calls for!

I was thinking maybe etouffee or Creole shrimp, to go over that big container of leftover rice, but wow---curry. One of my favorites, especially in chicken salad in Summer.

I mainly wanted to say that I was so taken with the picture of that beautiful lady---something about the way she looks into the camera with such a sweet expression. You know, i think of the black-and-white pictures, even from my own high-school and college days, and it just seems that all of them had such a confident air, and look of expectation, as if they were ready to meet whatever came---good thing, for life has lots to hand out and triumph over.

I'm headed to cook some shrimp while it's still so cool.
