BBQing - Can't be too safe!



My brother is such a comedian!
He and his wife are taking a volunteer fireman course
so at our family's Easter gathering we heard all
about it. Coincidentally we were grilling, so what a
great "photo op"!
of course the picture went right to Facebook and it was only minutes before our
brother who lives out of town was calling in a bit of a panic. "Was the house on fire?"

Here is the rest of our gang.



Our Easter Menu

Grilled shrimp, pork ribs, chicken kebobs,
ribeye steak
Potato Casserole
Three-bean Salad
and
Lemon Pound Cake

We were thrilled that our aunt drove over
from Austin for a quick visit.

You can barely see it but we are so proud of our
nephew. He just got his Aggie ring. Gig'em, Brandon!!
Our niece is the sweetest. She is planning to run for VP of
Student Council next year. Planning for her campaign
has already started. So exciting!

And the sling... our youngest son, Ryan, a realtor in McAllen, Texas, broke his shoulder about three weeks ago...
ouch!!

Hash Brown Potato Casserole
A Boykin Family Favorite

2 (10 oz.) pkgs., frozen hashed brown potatoes
1/2 c. butter, melted
1 tsp. salt
1/4 tsp. pepper
1/2 c. onion, chopped - less if you like
1  c. cream of chicken soup
1 pint sour cream
2 c. sharp Cheddar cheese, grated

2 c. corn flakes, crushed
1/4 c. butter, melted

Defrost potatoes. Mix all ingredients thoroughly except for the corn flakes. After mixing, top with corn flakes that have been mixed in with the butter. Put in greased casserole dish. Bake at 350 degrees for about 45 minutes.
