Dr. Peterson -- Applying that tanner!

Cosmopolitan - May, 2012
page 118

It's great to see someone who has worked hard succeed.
It's even greater when it's someone you know.
It's the best when it's someone in your family!

Our son Daren's wife, Dr. Jennifer Peterson, made Cosmopolitan magazine this month with an article about
preparing your skin for using a tanner.

Congratulations, Dr. Peterson!
We are so proud of you.

Oriental Chicken Salad with Todd and the Colonel

Applebee’s Oriental Chicken Salad? Yummmm! But instead of running to Applebee’s I learned long ago to use Todd Wilbur’s Top Secret Recipes knock-off recipe instead. AND now I’ve recruited the Colonel to help out as well. That is the KFC Colonel.

I know you can Google Applebee’s Oriental Chicken Salad and get the “original knock-off” recipe, so what I’m sharing with you is my version.. through years of practice.

My Oriental Chicken Salad

With Todd and the Colonel’s help…

I always triple this recipe because I make enough salad for two-three meals
3 Tbsp. honey
1 ½ Tbsp. rice wine vinegar
¼ c. mayonnaise
1 tsp. Grey Poupon Dijon mustard
1/8 tsp. sesame oil – small amount but it does make a difference

I triple this too!

3 c. chopped romaine lettuce
1 c. chopped red cabbage
1 c. chopped Napa cabbage
½ carrot, julienned or shredded
1 green onion, chopped
1 Tbsp. sliced almonds - or more
1/3 c. crispy chow mein noodles

½ Original Spice KFC Chicken breast
We remove the skin and crust, but you can leave it if you prefer.

Bon Appetit, Y'all!

Another mantel, another day!

I know you will identify with this...
I sat on my sofa after a long day of running errands,
staring at my mantel, wondering when the inspiration was
going to come to redecorate it.

Suddenly I hauled myself off of the sofa saying to myself,  "The time had come!" I was going to highlight my hodge-podge mis-matched collection of brown transferware, combining it with my two white Weller vases I bought recently.I was on a roll!!
Know that feeling?
It's great, right??

I have a hard time decorating without all of my
browns so hopefully that bit of green will
lighten things up a bit.

Ahhhh... another mantel; another day!

La Famiglia DePasquale Olio d'Oliva

Giovannina Teti DePasquale
Dolores Jean            Rosemary Elizabeth

Recently our middle son, Daren, called and asked a rather curious question.
"What was my favorite picture of my grandmother?"
This photo immediately came to mind as I think my grandmother, whom we
called "Jean" (I've written about her several times on this blog) was especially
beautiful and I thought my mother, Rosemary, looked really sweet in that
little dress.
As you might notice by reading these names I'm sure that you have guessed
that this is an Italian family. "Jean" came from Italy when she was nine years old.

Several days after my son had asked about that picture
a box was delivered to our home.
The photo had been turned into a label for the olive oil. Wow!
It turns out that my daughter-in-law, Jennifer, saw this ad and told Daren
that it would be a perfect Mother's Day gift for me.
Daren then got the rest of the family involved, so this great gift was
from all of my sons and their wives. Too cool, right?

Thank you, Jen, for suggesting this.

Notice the label on the bottle of olive oil?

La Famiglia De
Pasquale Olio d'Oliva

100% All Natural
Extra Virgin Olive Oil
Product of Texas

There are four bottles in this box.
The picture shows an olive tree and the label below states,
"Your Pendolino tree  planted in the Frassino orchard
At the Texas Hill Country Olive Company in
Dripping Springs, Texas."

The olive oil is delicious!!

BBQing - Can't be too safe!

My brother is such a comedian!
He and his wife are taking a volunteer fireman course
so at our family's Easter gathering we heard all
about it. Coincidentally we were grilling, so what a
great "photo op"!
of course the picture went right to Facebook and it was only minutes before our
brother who lives out of town was calling in a bit of a panic. "Was the house on fire?"

Here is the rest of our gang.

Our Easter Menu

Grilled shrimp, pork ribs, chicken kebobs,
ribeye steak
Potato Casserole
Three-bean Salad
Lemon Pound Cake

We were thrilled that our aunt drove over
from Austin for a quick visit.

You can barely see it but we are so proud of our
nephew. He just got his Aggie ring. Gig'em, Brandon!!
Our niece is the sweetest. She is planning to run for VP of
Student Council next year. Planning for her campaign
has already started. So exciting!

And the sling... our youngest son, Ryan, a realtor in McAllen, Texas, broke his shoulder about three weeks ago...

Hash Brown Potato Casserole
A Boykin Family Favorite

2 (10 oz.) pkgs., frozen hashed brown potatoes
1/2 c. butter, melted
1 tsp. salt
1/4 tsp. pepper
1/2 c. onion, chopped - less if you like
1  c. cream of chicken soup
1 pint sour cream
2 c. sharp Cheddar cheese, grated

2 c. corn flakes, crushed
1/4 c. butter, melted

Defrost potatoes. Mix all ingredients thoroughly except for the corn flakes. After mixing, top with corn flakes that have been mixed in with the butter. Put in greased casserole dish. Bake at 350 degrees for about 45 minutes.

Kreuz Market - #1 BBQ in Texas

BBQ - The National Dish of Texas

The sign on the door states,
"Vegetarians enter here,
Normal folks down the hall"

... that's where you order.

Texas Monthly rates Kreuz Market

Established in 1900 Kreuz' (pronounced "Krites")
is located in Lockhart, Texas.

The food was delicious.

Pork ribs
Spicy sausage
Soft white bread
German potato salad (contained shredded brisket)
Sauerkraut (contained shredded brisket as well!)
Cole slaw
and ice tea with lemon

Oh! And don't ask for a fork. I did and was promptly told to use my fingers.
That's the way they've done it for over a 100 years. Spoons and knives are provided.

Planning a trip to Texas?

Y'all come!

Spinach Salad and then a Shake - Earthquake Style

My husband and I were enjoying a salad in the
American Express Lounge in Mexico City today
when we began to have the strange sensation of
spinning... the type you felt as a child when you spun yourself
around trying to be dizzy.

We knew immediately that it was an earthquake as we
had experienced several in Mexico when we lived there.

This is what Global News reported,
"Just two weeks after a powerful earthquake struck southern Mexico, another tremblor, this time measuring 6.3 on the Richter scale, has again rattled Guerrero state, according to CNN.
Citing the US Geological Survey, the news broadcaster said the epicenter was about 17 miles from the city of Ometepec and that the movement occurred at a depth of 7.6 miles. There were no immediate reports of damage, death or injury."

It is truly an odd sensation. It was the first time I had been in a room full of people during an earthquake. To see other people's reactions was a study in itself. You become immediately somehow "attached" to strangers through
extreme uneasiness and admittedly some downright
fear. Some people ran for the doors and others either stood
(me) and still others stayed seated (my husband).
It lasted less than a minute... I think.
To imagine that Aeropuerto Internacional Benito Juarez was swaying from the underground movement was
pretty darn scary.

It's not clear if that was the cause for the delay of the
flights the rest of the day, but we arrived home considerably
later than planned...but then,
we arrived safely and with a tale to tell.

By the way... the salad:
fresh spinach
goat cheese
slivered almonds
thin sliced pears
thin sliced green apples
sliced mushrooms
all served in a parmesan cheese baked bowl
with a vinegrette dressing

Leaving Mexico...

We head home tomorrow...
back to Texas.

This is just a quick post as there is packing
to be done.

Great time with our son and his family.

Carmen and I made sure that we got our
palms today for Palm Sunday.

More later...
