Family dinner in Colima, Mexico



Family Dinner in Mexico

I could not resist "collaging" the pictures from the
family dinner we enjoyed with our son's mother.
Family in the area joined us for a very tasty
dinner. We were served a delicious beef soup, topped with
chopped sweet onions.
What grabbed my tasted buds was the warm
recotta (Mexican style) cheese with corn and
small strips of green chilies mixed in with it.
This was served with tostados.
You know I'll be experimenting with this recipe when
I get back to Texas.
Senora Carmen Cardenas, our daughter-in-law's mother,
is always a very gracious hostess and sets a lovely table
in white for all meals except at Christmas when she uses red.
I cringe when I see specks of red sauces and spices which somehow drip here and there, but the next time we dine, the
tablecloth is spotless.

One amazing fact about these pictures - these rooms where the meal was prepared and served in were outdoors.
If you look above the table at the background you will see Carmen's fully equiped kitchen. She has another one inside the house but it is rarely used.
All of this furniture is outside year around. The weather is
conducive to this type of living... with the exception that July and August are truly very warm.
In case you were wondering about dessert:
cheese cake topped with dewberries
and also apple cake...
all served with wonderful coffee, cooked on the stove
with cinnamon.

The weather in Mexico sounds wonderful...to be able to dine outdoors like that. Everything looks so beautiful...it sounds like they take good care to make sure everything is lovely for entertaining you. You would feel so special.

Karen, I just stopped by here to return your visit, and I found myself reading all the way past your father in the kilt and your grandmother's quotes (loved them) and all the way to Los Islas *think I spelled that correctly*.

I love your quotes on the side, too. The one you read at your dad's rosary was just PERFECT for me to read today.

It seems we have many of the same interests and like so many of the same blogs and parties.

By gum... I'm following you right back. I guess that means we're chasing our tails. LOL

Thanks for sharing your family with us. It's so interesting to hear about the outdoor lifestyle there and seeing that pristine, white tablecloth. I don't blame you for cringing when thinking about red sauce on it. Have a great weekend and great photo collage.

Ooh how i wish i could live outdoors the year around. Most of the time we have to batten down the hatches or they will fly away in the wind. Love the pretty table. Thanks so much for sharing.

Wow...she does set a lovely table in all white! I love white linens and use them often. I don't get too bent about food dripping on the linen. I just toss it in the washer on the soak cycle for a day or so with a little detergent and Clorox II. I rarely have a stain I can't remove. The food looks SO inviting! Great photos of a fun family gathering! Glad you all enjoyed!!!

Karen, I know that you are having a wonderful time with your family! I especially love that table. There is nothing better than a long table with plenty of room for lots of family and good food to go on it. Have fun and then have a good trip back to good old Texas!

What a lovely (and mouthwatering!) post! The table is beautiful..the food sounds wonderful, especially the cheese, corn adn green chili dish and the children are adorable. You two look great as well. It appears a lovely time was had by all :-)
