Happy Mother's Day in Mexico!

Today is Mother's Day in Mexico. It is always May 10th.

I am so proud of my son's wife. She is a wonderful mother, wife and also a very successful business woman.
Our son and their two children are blessed to
have you in their lives.

It was a "Foodie" sort of day!


It was a "foodie" day!

Our son, Daren, took us out to eat breakfast yesterday morning in Houston. The name of the restaurant is "Tiny Boxwood".

I ordered the pizza with thick-sliced bacon and very creamy feta cheese. On top was a poached egg. Yum!

In my mosaic is a Bombay salad (which was served with friend shrimp) which we ordered at Railroad Seafood Restaurant outside of little Odem, Texas... close to Kingsville, Texas. We had never eaten there before. Another yummy meal! I happen to have a great recipe to share with you.

Bombay Salad Dressing

1 large, ripe avocado
1 pint sour cream
1 pkg. onion soup mix
1 large clove garlic, crushed
Lime juice
Salt and pepper to taste
Dash of curry powder

Mash avocado well and add rest of the ingredients. Sometimes I sprinkle Fruit Fresh on it to keep it from turning dark.

Happy Mother's Day!

I know you have organized the most wonderful celebration for your friends ... old and new. Where you are it will be a breeze. The little sandwiches will be perfect and the punch will be too. You'll have a wonderful cake... probably white with beautiful, perfect flowers on it. There will be enough to go around. Enough for all! You'll have beautiful dishes to serve these luscious treats on and gorgeous cups for the perfect punch.
You were a wonderful hostess and always the best cook.
An artist in the kitchen, you created meals that everyone enjoyed.
I miss you terribly but how can I wish you back here where there is illness and so much discomfort? You are with Daddy and your parents and so many of the others we loved and are now enjoying their rewards.
Thank you for all of the wonderful lessons you taught us, allowing us to learn from the "pro".
I refuse to feel sad, but joy in my heart that you are in a beautiful place.
I love you, Mother!

Quinta Don Jose - Tlaquepaque

             I can never resist posting about Quinta Don Jose. It is about my favorite retreat and get-away. Located in Tlaquepaque, a "suburb" of Guadalajara, this is THE best B&B... great rooms, fabulous restaurant, great staff... and in the middle of some of the best shopping Mexico has to offer.
            My husband snapped a picture of me in the breakfast area this particular morning. I decided to try out the morning's special. The best I can do is describe the dish which is pictured in my collage. Quesadillas filled with cheese and chicken, topped with a wonderful mild sauce and topped with Mexican cheese, onion and shredded lettuce.. and then my favorite... the "crema", a Mexican cream drizzled over the whole concoction. This was served with fresh orange juice, coffee, papaya, watermelon and honeydew.
            We enjoyed our hearty breakfast surrounded by beautiful flowers like the yellow shrimp plant. There was also bright orange honeysuckle. Hummingbirds were everywhere.
            "Cabot", the B&B black and white cat came out long enough to check out the surroundings. He is called "Cabot" because of his bobbed tail, making him look a little like a rabbit from the back... and then of course the "ca".. for cat. He truly thinks he owns the place.
             We'll be back at our little retreat in the next three weeks as we travel back to Mexico on business. I'm sure I won't be able to resist posting about Quinta Don Jose then too.

Maribess' Lemon Meringue


My dear friend, Maribess...
One of THE best cooks I know!


My husband and I visited Maribess and her husband, Don, recently. One of her "kitchen kreations" was this delicious lemon pie. It was the best I have ever eaten!

Doesn't this just make your mouth water???

Maribess' Fresh Lemon Pie

Filling...
1 1/2 c. sugar
7 Tbsp. cornstarch
3/4 c. fresh lemon juice
1/2 c. cold water
3 egg yolks, beaten
2 Tbsp. butter
1 1/2 c. boiling water
1 tsp. grated lemon rind
yellow food coloring

Meringue...
1 Tbsp. cornstarch
8 Tbsp. sugar
1/2 c. water
3 egg whites
pinch of salt

Filling...
In a 2-3 qt. sauce pan, mix sugar, etc. Blend. Add egg yolks and blend thoroughly. Add water, stirring gently constantly, with rubber spatula.
Gradually bring mixture to a full boil, stirring gently and constantly with spatula over med. to high heat. Reduce heat slightly as mixture begins to thicken. Boil slowly for 1 min.
Remove from heat and stir in grated peel and food coloring. Pour hot filling into baked shell. Let stand, allowing a thin film to form while preparing the meringue.

Meringue that won't weep (shouldn't)...
Cook together until clear: cornstarch, 8 Tbsp. sugar and water. Cool. Add egg whites and salt, which have been beaten until foamy and are standing in peaks. Continue beating until stiff peaks form. Pile on pie and bake at 325 degrees until golden brown.

Maribess' note: I make this with Meyer lemons which are sweeter than the ordinary lemons. If not using Meyer lemons, cut lemon juice to 1/2 c. and cornstarch to 6 Tbsp.

Makes one pie

There just aren't many friends like Maribess who you don't see often (we live at opposite ends of the state and through the years have lived in different countries), but we can still pick up the phone and call at any time. Our friendship spans almost 40 years. I'm so blessed to have her in my life!

Silver Casserole Holders - New Use!



By no means do I consider myself a "crafty" person.
I admire people who are though. It's just that if I can come up with something that takes me about 10 minutes tops to complete then I'm real happy ecstatic!
I bought one of the silver-plated casserole holders in an antiques store in Goliad, Texas. The other one I bought from a local Market Days event... actually from someone you probably know... Laura from White Spray Paint.
Anywho... I was decorating for a spur of the moment Easter dinner and had these two holders resting on my kitchen counter. I swear they were calling to me to be used.
So.... as you see, one became a cookbook holder and the other is a "knock-off" butler's tray. Eventually I will have a
piece of glass cut to fit the bottom of the one on the left. They probably need some polishing, but for now I am satisfied.
Each one of these casserole holders was less than $15!

Rather cheesy looking decantures but, oh well...
The shaker in the middle was my paternal grandmother's.
She kept it filled with cinnamon and sugar.
In case you can't see behind the shaker, there is a white container full of silver spoons.
